Chef
Daniel Thiebaut's abiding philosophy of excellence in food and service
makes his signature restaurant a "must visit" during your
visit to the Big Island. In 1998 close friend and Waimea resident,
Chuck Clarke, invited Chef Thiebaut to bring his famous cuisine to
the painstakingly restored, century old Chock In Store in Kamuela.
This re-creation of the "spirit of the past" is exactly
what Chef Thiebaut anticipated would set his restaurant apart from
others.
Daniel Thiebaut is an eclectic blend of antique
furnishings, one-of-a- kind table settings, vintage Hawaiiana, and
brightly colored Sig Zane fabrics. "Many folks have come in
to thank us for keeping the original structure", says Chef
Thiebaut. Chef Daniel Thiebaut began his training and career in
his native Lorraine region of France. His extensive worldwide experience
as a chef provides inspiration for his unique culinary style.
